- 1.5 cups Basmati Rice
- 1 carrot chopped
- 10-12 beans chopped
- 1/4cup green peas
- 15 cashewnuts roasted
- 3 green cardamoms
- 1 stick cinnamon
- 4 cloves
- 2 tsp Shaan Biryani Masala
- 1/4 tsp shahjeera
- 5-6 black peppercorns
- 1 tsp black pepper powder
- 1 pinch turmeric
- 2 onions sliced finely
- 1 onion chopped
- 3 cloves garlic minced
- 1 tsp ginger green chilli paste
- 3 tbsp curd
- 2 pinch saffron soaked in milk
- 3 tbsp milk
- 2 drops mitha attar
- 1/2 tbsp rose water
- 10-12 mint leaves
- 1 tbsp coriander chopped
- 3-4 green chillies sliced
- To taste salt
- 2 tbsp oil
- 2 tbsp ghee
- 1 pinch orange red food colour
Steps to make to make Mixed Veg Biryani with Saffron
- Soak rice for 15 minutes. Boil 5 cups water in a deep vessel. Add 3/4 th tsp salt,1 stick cinnamon, 2 cardamoms,2 cloves, 2 bay leaves and the soaked rice.Boil the rice al dente or 80 % cooked.Remove from heat discarding whole garam masalas and add 1 cup cold water and strain rice.Spread rice in a bowl and smear 1 tsp ghee.Heat oil in a pan.Sprinkle half crushed whole garam masalas.When they crackle,add minced garlic and chopped onion and fry lightly.Add chopped vegetables and pan fry.Set aside.
- Heat ghee in a separate pan.Fry the cashewnuts till light brown and crunchy.Smear little salt and pinch of sugar and fry onions till caramelized and crispy.Set aside.Sprinkle shahjeera and half crushed black peppercorns. When they crackle,add the pan fried vegetables. Add curd,ginger green chilli paste,few slit green chillies,black pepper powder,biryani masala,mitha attar,rose water and toss.
- Soak saffron in warm milk.In a heavy bottomed pan arrange layers of rice,vegetables, cashews for biryani.Smear 2 tsp oil and add a layer of rice.Sprinkle some caramelized onion and a tbsp of saffron milk on the rice.Spread the tossed vegetable masala over it.Layer rest of the rice over it.Sprinkle rest of biryani masala,saffron milk,pinch of food colour, fried onion,ghee,mint and chopped coriander leaves.Heat a flat pan and place the biryani vessel over it.Close lid tightly and dum cook.
- Cook on low flame and open lid after 30 minutes. Toss lightly and serve delicious Saffron flavoured Mixed Veg Biryani with raita or chaas.
