- 1 cup Ingredie brown basmati rice
- 1/2 tsp oil
- 1/2 tsp salt
- 5 cups water
- Ingredients for the Pulao
- 2 tbsp ghee
- 1 bayleaf
- 1 " stick cinnamon
- 3 pods green cardamom
- 1 star anise
- 1/2 tsp fennel/ sauf seeds
- 1 tsp jeera
- 1 onion, finely chopped
- 1/4 cup curds
- 200 gms paneer cubes, browned in 1 tsp ghee
- 1 tsp ginger - garlic paste
- 2 green chillies, slit
- 1/4 tsp Turmeric powder (haldi)
- 1 tomato, finely chopped
- 1/2 tsp Kashmiri red chilli powder
- 1 tsp Shahi biryani masala
- 1 tsp salt
- 2 tbsp mint, finely chopped
- 2 tbsp coriander, finely chopped
- 1 tbsp finely chopping coriander leaves for garnishing
Instructions to make to make Healthy Brown Rice Paneer Pulao by Brinda Gandhi, Dietician
- For cooking the Brown Rice
Heat 5 cups of water in a vessel, once the water comes to boil, add the salt, oil and soaked brown rice and cook them on medium flame till 90% cooked for 10-12 minutes.
Remove the cooked rice from water and keep aside.Tip : Make sure you do not overcook the rice - How to proceed
Heat ghee in a non stick pan and add the whole spices, saute for 2 minutes on medium flame - Add the chopped onions, ginger-garlic paste, green chillies & saute till they onions turn translucent.
- Add the chopped tomato & saute till the tomatoes turns soft & mushy
Add the turmeric powder, chilli powder, biryani masala and salt. Mix well and cook on slow flame for 2 minutes. - Add 1/4 cup water & let the spices cook.
Add whisked curds and saute till the curds combines well in the mixture. - Add mint leaves, coriander leaves, browned paneer and mix well.
- Spread the cooked rice evenly on top of the gravy, cover & let it simmer for 5 minutes on slow flame so that the ricr will soak in all the flavours.
